Cook a half of cup of dry farro as per instructions on package. Ralphâs Grocery Store carries Farro.Â
Half length-wise four papilla peppers or pablano, removing seeds and stems.
SautÃ© diced onion, bell peppers, jalapeÃ±o and garlic in a one to two tablespoons of olive oil. Amounts vary according to your taste.
Add raw diced chicken from one half breast and sautÃ© to browned.
Add a can of rinsed and drain black beans. Add cooked farro. Mix. Add a bunch of chopped cilantro.
Lay peppers on the bottom of casserole dish. Spread mixture evenly on top.Â Top with sliced tomatoes. Dilute the Hatch Green Enchilada Sauce with a cup of water and pour over peppers.
Bake covered at 350 degrees for approximately one hour.
Remove from the over, uncover and spread about a cup of grated Queso Fresco (low-fat). Return to over and cook to bubbly and nicely melted.
