Looking for an easy to make casserole recipe that is delicious, and extremely healthy. You and your family will be delighted with this Enchilada Green Pepper Dish.
Cook a half of cup of dry farro as per instructions on package. Ralph’s Grocery Store carries Farro.
Half length-wise four papilla peppers or pablano, removing seeds and stems.
Sauté diced onion, bell peppers, jalapeño and garlic in a one to two tablespoons of olive oil. Amounts vary according to your taste.
Add raw diced chicken from one half breast and sauté to browned.
Add a can of rinsed and drain black beans. Add cooked farro. Mix. Add a bunch of chopped cilantro.
Lay peppers on the bottom of casserole dish. Spread mixture evenly on top. Top with sliced tomatoes. Dilute the Hatch Green Enchilada Sauce with a cup of water and pour over peppers.
Bake covered at 350 degrees for approximately one hour.
Remove from the over, uncover and spread about a cup of grated Queso Fresco (low-fat). Return to over and cook to bubbly and nicely melted.
