Savory Sweet Potato Pancakes with Canadian Bacon and Poached Eggs - Meals by Mark

Meals by Mark* are healthy, flavorful and easy to assemble. Today's breakfast of Savory sweet potato pancakes with poached eggs and Canadian bacon was so good I had to share. It is a perfect combination of sweet and salty and especially good served with strawberries.
1 medium sweet potato coarsely grated
1/2 medium onion chopped
1 glove garlic minced
1 - 2 Tablespoon whole wheat flour
1 egg beaten
salt and pepper
Combine all ingredients and mix well. Heat a thin layer of peanut oil in a flat fry pan. Spoon mixture (approximately 1/4 cup) into oil. Fry until brown on both sides. Drain on a paper towel covered plate; keep warm. Prepare poached egg, pan fry Canadian bacon (no need for oil). Assembly as per picture above.
